Chucky Cheese

A killer three-cheese pie: mozzarella, provolone and white cheddar on red sauce, splattered with red pepper flakes and finished with hot honey.

Dough

Make first

Prep

  1. Sauce. Use the sauce from Mozzferatu.
  2. Cheese. Grate the mozzarella, provolone and cheddar from cold blocks and toss them together.

Build

  1. Stretch the dough ball to about 14 inches.
  2. Top in this order:
    1. Sauce, spread thin, leaving the rim bare.
    2. A good pinch of red pepper flakes right on the sauce, so they toast under the cheese.
    3. The three-cheese mix, all the way to the edge of the sauce.

Bake: outdoor oven

  1. Preheat to about 700°F on the stone, checked with an infrared thermometer.
  2. Bake 2–3 minutes, turning the pizza every 20–30 seconds.
  3. Done when the rim is browned and the cheese is bubbling with a few golden spots.

Finish

  1. The splatter. Give it a generous shake of red pepper flakes so it looks like a Chucky crime scene.
  2. Hot honey. Drizzle it over in thin lines. Sweet first, then it gets you.
  3. Slice with your biggest knife. Chucky would want it that way.
